Job Title: Quality & Food Safety Specialist - Assistant Manager
Work location: Ajman, UAE

Job Summary
  • The incumbent will work on verifying quality control, monitoring that food safety procedures and documentation are being followed, problem solving as it relates to food safety issues, and assisting with compliance with Hazard Analysis Critical Control Point (HACCP), Good Manufacturing Practices (GMP), and Safe Quality Foods (SQF).
  • He/she will oversee the maintenance and upgrade of sanitation and hygiene standards to ensure all food prepared and employees are free of microbiological, chemical, and physical contamination and all work areas conform to the required hygiene and sanitation levels.
 
Key Responsibilities:
 
Specific responsibilities will include, but not be limited to, the following:
  • ·       Sample collection for microbial testing.
  • ·       Record test results and maintain appropriate documentation.
  • ·       Select produce samples for food safety, time study, and quality control testing.
  • ·       Responsible for product quality inspections and proper storage
  • ·       Responsible for quality checks for all ready-prepared and raw foods.
  • ·       Verify and communicate to appropriate departments any findings that relate to food safety and/or quality issues.
  • ·       Assist with the maintenance of food prep and handling equipment, surfaces, and tools.
  • ·       Help develop, maintain, and update all records, manuals, training procedures, and product specification books as they pertain to food safety and quality control.
  • ·       Assist with preparation for any and all food safety audits.
  • ·       Frequently audit the facility & ensure cleanliness of kitchen & work stations, restrooms & other areas that are accessed by the staffs and visitors.
  • ·       To lead and take responsibility of food complaints investigations, findings & preparing reports.
  • ·       Responsible for developing and implementing food safety training programs for employees to ensure they are aware of proper food handling procedures.
  • ·       Perform other duties as required by management.
 
Education:
  • ·       Faculty of Veterinary Medicine: Food Safety and Hygiene Program or equivalent
  • ·       College of Science, Division of Biological Sciences
  • ·       College of Agriculture: Master's degree in food safety and quality or equivalent
  • ·       College of Agriculture: Bachelor of Food Science or equivalent
 
 
Qualifications:
  • ·       A minimum of 4-8 years’ experience in food safety and hygiene in a hospitality or similar large restaurant complex is preferable; a preferred prerequisite is experience in the hotel industry.
  • ·       Must be familiar with HACCP, GMP’s, and food regulations.
  • ·       Must be flexible with work hours and able to work weekends or holidays if required.
  • ·       Must be able to work independently.
 
Working Conditions:
Work Environment:
  • The central kitchen is a fast-paced and high-stress environment. especially during peak meal production times. Quality & Food Safety Specialist must be proactive in setting guidelines and enable the production team to effortlessly perform their duties.
Safety Measures:
  • Adherence to strict safety and hygiene protocols is mandatory. This includes the use of personal protective equipment (PPE), such as gloves and aprons. as well as adherence to food safety guidelines to prevent accidents and ensure the safety of both staff and consumers.
Teamwork:
  • The kitchen operates as a team, and communication and collaboration with other kitchen staff, including chefs, cooks, kitchen assistants & operation staffs are vital for a smooth workflow.
Pressure:
  • The kitchen often experiences high-pressure situations, especially during meal plan delivery times or busy catering events. Quality & Food Safety Specialist need to maintain focus, stay organized, and handle stress effectively to meet organizational goals.
Cleanliness and Organization:
  • Enable the team to maintain a clean and organized station and following food safety standards.
Training and Advancement:
  • Create, conduct various training programs and modules to enable employees with proper knowledge of their day-to-day activities and its impact on quality & health safety standards.
Work Timings:
  • The business is operated on a 24/7 model, and it requires its employees to work in different shifts & on public holidays with a staggered weekly off. one day per week. The work schedule will be 9 hours with 1 hour coffee & lunch break.
